White Chocolate, Blueberry and Mint Salad

With July being National blueberry month, Coda Signature and chef Lauren Gockley are proud to share this perfect summer salad. Please enjoy!

Serving size 1 salad, 10 MG THC per serving (makes 5 salads)

Step 1 – Blueberry Salad

Ingredients:

  • 1 cup of blueberries
  • Zest and juice from 1 lime
  • 3 tablespoons chopped fresh mint, minced
  • 2 tablespoons sugar
  • 2 1/2 teaspoons grated peeled fresh ginger
  • 2 teaspoons honey

Instructions:

  • Wash the blueberries
  • Add the zest and lime juice
  • Add the mint, ginger, sugar, and honey
  • Can be made up to 24 hours in advance

Step 2 – White Chocolate Topping

Ingredients:

  • ½ bar of Coda Signature Cream & Crumble
  • ½ bar of quality white chocolate
  • 200g Heavy Cream, cold
  • 100g Sour Cream, cold

Instructions:

  • Melt the two half chocolate bars in the microwave for 15 seconds.
  • Combine the heavy cream and sour cream in a metal bowl.
  • Whisk until soft peaks form.
  • Add about 2 spoonfuls into the melted chocolate mixture.
  • Stir to lighten the chocolate.
  • Proceed to gently fold in the remaining cream into the chocolate.
  • add this whipped topping to your blueberry mixture, and enjoy!
